Mastering the Fundamentals
Brewing is a science. Understanding these core variables gives you the power to troubleshoot, adapt, and perfect any recipe. This is the key to consistency.
⚙️ Grind Size
The most critical variable. Finer grinds extract faster due to more surface area. Coarser grinds extract slower. Match the grind to your brew time.
⚖️ Brew Ratio
The weight of coffee vs. water (e.g., 1:16). This controls the strength and concentration of your final cup. A lower number (like 1:15) means stronger coffee.
🌡️ Water Temperature
Ideal range is 90-96°C. Hotter water extracts more efficiently, which is crucial for our dense, light-roasted beans to unlock their sweetness.
⏳ Brew Time
The total duration water is in contact with coffee. It's an outcome of your grind size. Too fast = sour. Too slow = bitter. Use time as your diagnostic.
💧 Agitation
Stirring or swirling the coffee. Ensures all grounds are wet for an even extraction and prevents "channeling," where water bypasses coffee.
🌍 The Sri Lankan Difference
Our humid climate makes beans absorb moisture, effectively making your grind finer. On humid days, grind slightly coarser. Use filtered water to counter mineral hardness, which can mute our coffee's bright acidity.
